London Stock Exchange's kitchen is operated by ‘boutique’ caterer Vacherin and led by Head Chef Martin Rookard and Sous Chefs Joe Mallia and Jon Li.

With exceptionally high standards, they cook for our clients on a daily basis and offer everything from exquisite fine dining to bespoke buffet lunches and VIP breakfasts.

Our chefs create seasonal menus with a variety of options but can work with you to create a bespoke menu tailor-made for your event.

Martin Rookard, Head Chef

With over 15 years experience cooking in some of Canary Wharf’s most well known financial buildings, Martin oversees all the menus keeping them on trend and refined. A keen beekeeper, he looks after hives in his hometown of Ingatestone in Essex producing honey which he also includes in many of his dishes. Growing his own vegetables and hunting his own game, Martin has an exceptional knowledge of produce and an impeccable pallet that he uses to create innovative and delicious dishes.

Joe Mallia, Sous chef

Joe joined London Stock Exchange in early 2017. Having worked in hotels, restaurants and other corporate organisations in London, Joe’s prior experience includes the Langham Hotel, the Royal Automobile Club, with his most recent role as Sous Chef at Ince & Co.; an International Law firm in the City.
Joe is always looking for inspiration and is constantly seeking ideas from the culinary world, which further feeds his love of cooking, and the simple idea that choosing a few ingredients and transforming them into a memorable dish or experience that can last a lifetime.

Jon Li, Sous Chef

Jon has been a professional chef for over 12 years; working in hotels, events, restaurants and contract catering. He has worked with Vacherin for 3 years and joined LSEG in early 2017. Jon loves to use modern techniques and likes to have a technical approach to cooking, with a particular love of Japanese food and flavours while also admiring the Nordic-style of food. Equally, Jon keeps a close eye on ever changing trends and always looks around for inspiration everywhere he goes.
